Heavenly Hudson Valley Striped Bass “En Papillote” – Ivey’s In My Kitchen

“No, I do not expect you to know how to pronounce it, hell, I can’t even pronounce it. But I sure can cook it, and so will you after your done reading this article. This is a perfect recipe for our wonderful Hudson Valley Striped Bass and a hibachi on the boat. It’s one of the easiest ways I know to enjoy our lovely local catch. Wrapping in parchment paper is a quick, delicious method for cooking fish with almost no clean up. Beat that! Fish cooked in parchment paper retains not only its moisture but intensifies its flavor. Very little seasoning is needed and while this recipe is dedicated to our jewel of the Hudson, it is a method that can be used with any type of fish. Folding the parchment paper closed is the key. Be sure to use a piece of parchment at least double the size of the piece of fish. Place the fish in the center of the parchment…”
